
Haddock Fillet with Leek and Corn

Always just fish fillets with potatoes. No! This time it’s haddock fillet with leek and corn, served with a creamy polenta to bring out the flavor of the vegetable topping.
This dish is very simple but tastes great and is very creative!
Haddock contains 16.3 g of protein and 0.45 g of fat per 100 grams. This makes haddock meat very low in fat. The energy content of 310 kJ (74 kcal) per 100 grams is also very low compared to other types of fish. Haddock contains large amounts of vitamin B12, and vitamins B3 and B6 are also present in significant quantities.

Ingredients
4 Haddock Fillets
1 can Kernel Corn
1 Leek, sliced finely
6 Slices Bacon, chopped
12 Cherry Tomatoes, halved
Salt and Pepper
Paprika
Chili
1 cup Corn Flour/Polenta Flour
4 cups Water
20 g Butter
1 tsp Salt
2 tbsp Sour Cream
20 g Parmesan
Polenta
Instructions

Step 1
To make the polenta, bring the water and salt to the boil. Then slowly trickle in the corn flour, stirring constantly with a whisk, otherwise it will splatter. Leave to simmer for approx. 15 minutes, still whisking away, then mix in the butter, sour cream and Parmesan. If you want the polenta to be soft, add a little more cream or water. The polenta can be covered and kept warm.

For the vegetables, fry the bacon in a wide pan. Then add the leek and fry for about 5 minutes.

Add the corn kernels and halved cherry tomatoes and season well. Simmer for 5 minutes.

Meanwhile, season the fish fillets and fry in a little oil on both sides.

Spoon some polenta onto the plates, place the fish fillet on top and top with the vegetables. Sprinkle over some paprika for color and serve.
