Flädlisuppe ~ traditional Swiss Soup made with Crepe

Flädlisuppe is one of the simplest traditional soups from Switzerland. I made my crepes with spelt flour.

The good thing about it is that you can make several dishes from it. That’s what I did, because my husband loves this soup, but I can very well do without it. I then make a sauce or filling for hearty Omelets or sweets on the side. That way everyone is happy!

As a kid, and also for my own kids, these crepes were a feast! They loved the sweet crepes, filled with jam, Nutella, honey, berries or sugar, they just disappeared from the plates in no time!

Ingredients

Spelt Omelets:

  • 4 Eggs

  • 200 g Spelt Flour

  • 500 ml Milk-Water Mix

  • 1 Pinch of Salt

  • Soup:

  • 800 ml Water

  • 2 Stock Cubes (see Notes)

  • 3-4 Omelets

  • 1 tbsp chopped Chives

  • some Pepper

Step 1

Mix the omelet ingredients into a foamy batter.

Heat a few drops of oil in a shallow pan and pour in a ladleful of batter at a time. Spread the batter flat with a wooden ladle to form a thin omelet. Turn after about 2 minutes and fry for another 1-2 minutes until brown. Transfer to a plate.

Bring the water to the boil with the stock cubes.

Roll up the omelets and cut into strips approx. 1 cm wide (or narrower). Add them to the soup and cook briefly. Add the chives, season with pepper and serve!

Notes

Stock cube: I used chicken, but if you want vegetable stock, you can use that. However, if you want a really rich soup, you should use beef stock!
