Bobotie – South African Meatloaf

Bobotie – South African meatloaf was brought to the country by immigrants from Indonesia. It is mixed with spicy beef or mutton, vegetables, fruit and curry powder. The meatloaf is traditionally spread flat in a casserole dish and baked with egg and milk. It is served with saffron rice and chutney.

The dish has been known in the area around the Cape of Good Hope since the 17th century and originally comes from Java or the Dutch East Indies, although the name is derived from the Indonesian bobotok, or from the Malay boemboe, which means curry spice.

This dish is part of Culinary World Travel of Volkermampft which is traveling to South Africa this month.

Ingredients

    • 500 g minced Beef or Lamb

    • 1 Onion chopped

    • 4 Garlic cloves, chopped

    • 2 tbsp Curry Powder

    • 1 tsp Turmeric

    • ½ tsp Pepper

    • ½ tsp Coriander Seeds

    • ½ tsp Ginger Powder

    • Dried Herbs as desired

    • some Chili Powder

    • 1 red Chili, Seeds removed, chopped

    • 1 Granny Smith Apple, diced

    • 2 slices of whole wheat Toast Bread, torn

    • 100 ml Milk

    • 1 tsp Salt

    • 2-3 tbsp Chutney, I used my Date Chutney

    • 1 ½ tbsp Vinegar

    • 1 tsp Broth Powder

    • 50 g Raisins

Topping

  • 2 Eggs

  • ¼ tsp Salt

  • 125 ml Milk

  • some Lemon Zest

Instructions

Step 1

Fry the onion, garlic cloves and meat in a wide pan, then mix in all the spices and fry until the meat is cooked through.

Step 2

Add the chili and apple and fry briefly. Tear up the bread and soak in the milk, then add the dissolved bread to the meat.

Now add all the remaining ingredients and mix well. Pour this meat mixture into a gratin dish and smooth it out.

Mix the topping ingredients together and pour over the meat.

Bake in the oven at 180 C degrees for 30-40 minutes until the egg is golden. Serve with saffron rice and chutney.

Notes

Can be produced very well in large quantities!
