Risotto with Beef from the TM6

I now make risotto more often, because thanks to Ramses (my TM6) I can leave everything to simmer without having to stand there all the time to make the risotto creamy. That’s how this risotto with beef was made in the TM6.

I didn’t want to serve it with steak, but still wanted to include some beef, so I fried the meat separately until crispy and added it to the risotto at the end. It was very tasty!

Ingredients

Thermomix6 Recipe:

  • 3 Garlic cloves

  • 1 red Onion

  • 15 g Olive Oil

  • 120 g Risotto Rice (Loto Rice!)

  • 1 small Eggplant, diced

  • 80 ml White Wine

  • 200 ml Broth

  • 80 g Cottage Cheese

  • Salt and Pepper

  • Rosemary

  • Paprika

  • ½ tsp Turmeric (for the color, you could also use Saffron)

  • 1 Handful Rocket, chopped

  • 30 g Parmesan

  • 20 g Butter

  • 1 tbsp Olive Oil

  • 300 g thin slices Beef, like for Fondue Chinoise

Instructions

Step 1

Place the garlic cloves and onion in the Thermomix and chop for 5 seconds/speed setting 10.

Step 2

Add the olive oil. Add the risotto rice. 2 minutes/120 C degrees/speed setting 1

Step 3

Add the eggplant, pour in the white wine and the stock, 3 minutes/98 C degrees/speed setting 1.

Step 4

Add the cottage cheese and spices, mix briefly with a spatula, then simmer for 20 minutes/98 C degrees/speed setting 1.

Step 5

Meanwhile, shred the beef and fry in the hot oil until cooked through. Mix the parmesan and butter with the beef to the finished Risotto and serve.
