Vegetable Patties

If you have leftover vegetables that don’t make a meal on their own, I usually make vegetable patties with them.
It’s very simple, you grate the different vegetables and fry them. Why else are they called potato pancakes? I served them with an avocado dip, which worked really well!

Ingredients
2 large Potatoes
2 Carrots
1 red Capsicum
1 Shallot
2 Garlic cloves
Salt and Pepper
Paprika
Chili
2 Eggs
50 g Flour
1 ripe Avocado
Salt
Juice of ½ Lemon
Dip
Instructions

Step 1
Peel the potatoes and grate on a coarse grater. Place in cold water for 5 minutes.

Meanwhile, grate the carrots and finely chop the capsicum, garlic cloves and shallot.

Drain the potatoes and dry them in a cloth. Then mix everything together and season well.

Add the eggs and flour and mix well. Fry well on both sides in hot oil.

For the dip, peel the avocado and remove the stone. Mash it in a plate, then season and mix with the lemon juice. Serve the pancakes with the dip.
