Chicken Rolled Roast with Wild Garlic Pesto Ham and Cheese

This chicken roll roast with wild garlic pesto ham and cheese is actually really easy to make, can be prepared well ahead and is even easy to transport. I did this when my daughter was stressed and there wasn’t enough time to come to our house for dinner. I simply packed everything up, bought a train ticket and went there.
This wild garlic goes by a handful of names—ramsons, or “bärlauch” in German, wild garlic, bear’s garlic. It’s a relative of chives that grows wild. With an aroma—and taste—that’s a cross between garlic and onion, they’re hard to miss when you come across them. Ingredients
6 Chicken Breasts
6 Slices cooked Ham
10 thin slices Raclette Cheese
1 jar Bärlauch Pesto
Salt and Pepper
Paprika
Chili
some Olive Oil
Instructions

Step 1
Slice the chicken breasts down the middle without cutting all the way through to create a large cutlet. Lay these out on cling film, covered with cling film, and pound flat.

Then lay the cutlets out on new cling film so that they form a rectangle.

Spread a thick layer of wild garlic pesto on the rectangle, then place the ham slices on top, followed by the cheese slices.

Now pull the top of the cling film down so that the roast rolls up, place it in a cake tin (I have a glass one) with the seam facing downwards and season the top and brush with a little olive oil.

Roast in the oven at 200 C degrees for 1 hour.
The cheese melts and makes a fine sauce.
