Salmon with Okra and green Mango

Salmon with okra and green mango is perhaps unusual for Europe, but here in the Philippines it is mango season! It tastes wonderful, because the warm fish goes wonderfully with the crispy fried okra and the sour mango. Mango is not only good ripe (I don’t like it ripe at all!) but also super unripe. So, they can be served with fish and meat, or you can make a salad with them, there are many possibilities!

Ingredients
1 Salmon Fillet approx. 130 g
Salt and Pepper
dried Dill
10 Okras
1/2 tsp Turmeric (Superfood!)
1/4 tsp Cumin Seeds
1 green Mango
some green mixed Salad Leaves
Salad Dressing
Oil for frying

Step 1
Wash the fish and pat it dry. Season well. Cut the okra into thin slices and fry them in a little oil until almost crisp.

Season with salt, pepper, turmeric and cumin seeds. Push the okra to the sides of the pan and add the fish with the skin down. Fry for approx. 5 minutes, then cover the pan, turn the heat down and fry for another 5-7 minutes. Turn the salmon over and cover the pan again, cook for another 7-10 minutes. Be careful to not let the okra burn.

Step 3
Meanwhile peel the mango and cut the meat of it into julienne. Put some of the green lettuce into a plate, drizzle with salad sauce, add the salmon and the crisp okra and top with the green mango.
