Rolf’s black Jasmin rice with a beef-lentil curry is the best combination of rice and curry. The rice has a light bite, tastes very good and fits wonderfully.

Ingredients
3 cups black Jasmin Rice
6 cups Water
400 g ground Beef
4 cloves of Garlic, sliced
2 Onions coarsely chopped
2 Lemongrass, crushed
Salt and Pepper
Wer mag, Chili
50 g red Lentils, washed
300 g Coconut Milk
2 tbsp green Thai Curry Paste
2 Carrots, diced
2 tbsp Oil
chopped Spring onion
Instructions

Step 1
Wash the rice and simmer with the 6 cups of water on medium fire for about 20-30 minutes. The rice can be kept warm covered.

Meanwhile, heat the oil in a wok and sauté the onions and garlic cloves. Add the carrots and lemongrass. Then add the minced meat and mix well and fry until cooked through.

Add the lentils and coconut milk, mix in the curry paste and simmer for about 20 minutes.

Season to taste and serve, sprinkled with spring-onion, with rice.
