Berry Cake with Streusel

What could be more delicious in summer than eating fresh berries? I love them and when I am in Europe, I enjoy them very much. But I also use them here in Asia when they do not cost a fortune. That’s why I like to reach for the frozen berries sometimes!

They work quite well in some recipes, but not all. In this one they were perfect!

Ingredients

For the Base: (square form 26/26 cm)

  • 150 ml Cream

  • 100 g Sugar

  • 1 Pinch of Salt

  • 2 Eggs

  • 80 g yogurt

  • 240 g Flour

  • 1 tsp Baking Powder

  • 2 tsp Vanilla Sugar

  • Topping:

  • 200 g frozen mixed Berries, thawed and drained

  • Streusel:

  • 100 g cold Butter diced

  • 100 g Sugar

  • 100 g ground Almond

  • 1 tsp Lemon Zest

Instructions

Step 1

Whip the cream until stiff, adding the sugar and vanilla sugar. Add salt. Add the eggs one by one and beat. Now add the yogurt. Mix flour and baking powder and add. Pour the dough into the baking pan lined with baking paper and flatten. Put the berries on top.

Step 2

For the crumble, rub the butter with the remaining ingredients. Then spread over the berries.

Bake the cake in the oven at 180 C degrees for about 20-25 minutes. Let the cake cool completely and sprinkle with powdered sugar if desired.
