Balsamic Pork Loin with homemade Herb Noodles

When guests come or a celebration is on, you want to cook something special. But you also do not want to work in the kitchen all the time! This menu is special, and you can prepare everything well in advance. The pasta can be made the day ahead, the meat is marinated and cooks by itself in the oven, and the cherry tomatoes are cooked quickly.

Ingredients
For the meat:
1-2 Pork Loins
Fresh Rosemary
8 Garlic cloves, chopped
Salt and Pepper
Chili
Paprika
some Olive Oil
50 ml Balsamic Vinegar
50 ml Red Wine
Leftover Marinade
200 g Mushrooms, chopped
Salt and Pepper

100 ml Cream
Cornstarch
450 g Cherry Tomatoes

Step 1
Make the pasta according to this recipe, but instead of spaghetti cut wide noodles. These noodles can be prepared the day before, dusted with a little flour, dried on a cloth overnight. Then they are cooked in salty boiling water for 5 minutes.

Place the meat in a greased baking dish. Mix the marinade ingredients together and pour over the meat. Cover and let marinate for at least 2 hours, or overnight. Remove from refrigerator 1 hour before cooking! Roast in the oven at 180 C degrees for 40 minutes.

Place the cherry tomatoes in an ovenproof dish, pour a little olive oil over them and season with salt and pepper. Cut the garlic cloves into pieces and put them on top with the rosemary. Roast in the oven at 180 C degrees for 20-30 minutes.

When the meat is cooked, drain the remaining marinade, and put it in a pot. Keep the pork tenderloins warm covered with foil.

Add the mushrooms and season well. Add the red wine and let it boil down briefly. Then add the cream and thicken with cornstarch if necessary. Serve on warm plates.
