Berry Cake

It’s berry season and this is my favorite time of the year! I love all kinds of berries, but mostly raspberries (I think, it’s not hard to see) I actually wanted to bake a lemon cake but then I thought, why not beautify it with berries? And I did! The cake turned out moist and delicious, perfect for us! I chose raspberries and blueberries because of the colors, they look beautiful in the cake!

Ingredients
For a Cake
150 g soft Butter
210 g Sugar
1/4 tsp Salt
5 Eggs
1 Lemon, the Juice
250 g Flour
100 g ground Almonds (I used the almond meal)
2 tsp Baking Powder
200 g Raspberries
200 g Blueberries
2 tbsp Flour
Instructions

Step 1
Mix the berries with 2 tbsp of flour, so they will not sink down in the cake.

Mix the soft butter with the salt and sugar, then add the eggs and mix thoroughly. Mix the flour with the baking powder and add to the dough. Also add the ground almond, mix well. Lastly add the berries and carefully mix them into the dough with a spatula.

Fill into a greased cake dish and bake in the oven at 180 C for 55-60 minutes.

Let cool completely and sprinkle with icing sugar.
