Faccio un Risottino, used my mother to say and went cooking the creamiest risotto ever! She was famous for her traditional Italian cooking; she was the world’s best cook! I am trying hard to copy her, but her Risotto was miles better. Maybe childhood memories have to be this way… everything seemed to be better and bigger.
But put aside my memories… I made a beautiful creamy Risotto with pieces of tomato. The secret to a creamy Risotto is easy; move it all the time and add fresh butter! Tomato = Pomodoro in Italian, comes from Pomo d’Amore = Love-Apple. Many think, pomodoro means Golden Apple, which is wrong!

Fuer 2 Personen:
160 g Risotto Reis, Arborio oder Vialone
20 g Butter
2 EL Olivenoel
2 Knoblauchzehen, gehackt
2 Tomaten, geschaehlt und gehackt
100 ml Weisswein
800 ml Bruehe
1 Beutel Safran
Salz und Pfeffer
Rosmarin
Paprika
30 g Butter
20 g geriebener Parmesan

For 2 Persons:
160 g Risotto Rice, Arborio or Vialone
20 g Butter
2 tbsp Olive Oil
2 cloves of Garlic, chopped
2 Tomatoes, peeled and chopped
100 ml White Wine
800 ml Broth
1 Pinch of Saffron Powder
Salt and Pepper
Rosemary
Paprika
30 g Butter
20 g grated Parmesan

Heat the 20 g butter and the olive oil in a heavy pan and fry the garlic. Add the rice and move it around until the rice corns are all translucent. Add the white wine and move the rice around until the whine has reduced. Season well and add the saffron. Then add the tomatoes and cook them with the rice. Now add a soup ladle of broth, move the rice and let reduce, add another ladle of broth and move and let reduce, go on until the rice is soft. By moving the rice, the starch of the rice will get into the liquid and make the Risotto creamy. When the rice is cooked add the butter and some grated Parmesan and mix well. Serve hot!
