Kaese-Kraeuter Scones – Cheese-Herb Scones

Scones sind ein typisch englisches Gebaeck, das normalerweise suess, mit Erdbeer Konfituere und Clotted Cream zum Afternoon Tea serviert wird. Ich liebe sie sehr! Meine Scones sind aber deftig, mit viel Kaese und Petersilie! Ja, Ihr koennts mir glauben, wenn Ihr die einmal gemacht habt, macht Ihr sie immer wieder! Sie sind eine Wucht!

Scones are typical English pastries, normally sweet and served with strawberry jam and clotted cream during afternoon tea. I love them! My scones are not sweet, I used a lot of cheese and parsley in them. Oh yes, you can believe me, when I say, once you had them, you will have them again! They are delicious!

Fuer ca 25 kleine Scones:
500 g Weissmehl
1 ½ EL Backpulver
½ TL Salz
100 g Butter
120 g geriebener Kaese wie Gruyere oder Emmenthaler
½ Bund Petersilie, gehackt
4 Fruehlingszwiebeln, gehackt
100-120 ml kalte Milch
3 Eier
5 EL geriebener Kaese
1 Eigelb zum Bestreichen

Das Mehl mit dem Backpulver, Salz und Kaese vermischen. Die Butter in Stuecken zugeben und mit der Kuechenmaschine mischen, bis es aussieht wie Streusel. Die gehackten Kraeuter zugeben. Dann die Eier und Milch zugeben und alles kurz zusammen kneten. Nicht zu lange kneten, es ist kein Brot! Den Teig flach druecken, ca 3 cm hoch und in Klarsichtfolie verpackt mindestens 1 Stunde im Kuehlschrank lagern.
Den Ofen auf 190 C Grad vorheitzen und unterdessen die Teigplatte mit einem Teigschaber in Dreiecke schneiden. Bei mir gab es 25 kleine Dreiecke, aber Ihr koennt die so gross machen, wie Ihr wollt. Die Teigstuecke auf ein Backblech legen und mit dem verschlagenen Eigelb bestreichen. Mit den 5 EL Reibkaese bestreuen. Im Ofen ca 20 Minuten backen.
Die Scones sind wunderbar, wenn sie lauwarm serviert werden. Sie passen zu jeder kalten Fleischplatte oder zu Salat, oder einfach so als Fingerfood.

 For approx. 25 small Scones:
500 g All-purpose Flour
1 ½ tbsp Baking Powder
½ tsp Salt
100 g Butter
120 g grated Cheese like Gruyere or Emmenthal
½ Bunch Parsley, chopped
4 Spring-onions, chopped
100-120 ml cold Milk
3 Eggs
5 tbsp grated Cheese
1 Egg-yolk for egg wash

Mix the flour with the baking powder, salt and cheese. Cut the butter into pieces and add. Now mix with your kitchen machine until the mixture is all crumbly. Add the chopped herbs. Lastly add the eggs and milk and knead quickly together. Do not knead for long, it’s not a bread dough! Flatten the dough now to approx. 3 cm thickness and wrap into cling-foil. Let rest in the fridge at least 1 hour.
Preheat the oven to 190 C. Meanwhile take the dough from the fridge and cut it into triangles. I made 25 small ones but it’s up to you how big you want them. Put them onto a baking tray and brush with egg wash. Then sprinkle with the 5 tbsp grated cheese. Bake in the oven for approx. 20 minutes.
The Scones are delicious when served warm. They are perfect to cold meat platters, salad or just like this as finger-food.
