Glutenfrei, No Carbs, gesund… ja da kann ich mithalten! Dieser Blumenkohl Stampf oder Brei schmeckt wunderbar zu allem moeglichen. Wer also Kartoffeln vermeiden will, wegen der Kohlenhydrate, der nehme Blumenkohl! Wir haben es sehr gerne gegessen und mein Mann meinte, wenn man nicht weiss, dass es Blumenkohl ist, koennte man meinen, es sei Kartoffelbrei. Ja, vielleicht wenn man mit geschlossenen Augen isst.

Noch ein Tip: Wenn man den Brei mit Bruehe verduennt, gibts daraus eine feine Suppe!

Gluten-free, no carbs, healthy… yes, that’s what I bring you here. This cauliflower mash tastes wonderful creamy and fits to anything. Whoever wants to avoid potatoes because of the carbs, use cauliflower! We loved it and my hubby said, it is so nice and creamy, you would think it’s potato mash. Yes, maybe if you eat it with eyes closed. 

One tip: make it more liquid with some broth and you have a delicious soup!

Fuer 4 Personen:
1 Blumenkohl
100 g weicher Ziegenkaese
100 g geriebener Gruyere
4 Fruehlingszwiebeln, gehackt
Salz und Pfeffer
Paprika
100 ml Sahne oder Milch

Den Blumenkohl hacken und in siedendem Salzwasser ca 8 Minuten kochen, gut abtropfen lassen. Den gehackten, gekochten Blumenkohl in den Mixer/Blender geben und die Sahne oder Milch zugeben, alles gut puerieren.
Dann in einer Schuessel mit den Kaesen, Fruehlingszwiebeln und den Gewuerzen mischen. Alles in einen Topf geben und langsam aufwaermen, bitte nicht sieden!

Der Blumenkohl passt sehr gut als Ersatz von Kartoffelbrei zu jeglichen sossigen Fleischsorten, ich habe ihn zu meine SlowCooker Rinderrippen serviert. Man kann ihn aber auch, wie oben erwaehnt, mit etwas Bruehe verduennen und als Suppe servieren.

For 4 Persons:
1 Cauliflower
100 g soft Goat Cheese
100 g grated Gruyere
4 Spring-onion, chopped
Salt and Pepper
Paprika
100 ml Whipping Cream or Milk

Chop the cauliflower and boil in salted water for approx. 8 minutes. Drain well. Put the cooked cauliflower into the blender and add the whipping cream or milk. Blend well!
Then mix with the cheese, spring-onion and spices. Pour everything into a small pan and slowly reheat, do not boil!

This cauliflower is a perfect replacement for potato mash and is delicious to any creamy meats, I served it with my SlowCooker beef ribs. And as I mentioned above, add some broth and you have a delicious soup!
