
Ribeye with Vegetables

Ribeye with vegetables is very easy to make, but when served with herb butter, the dish becomes a “Sunday roast.” (Ribeye = entrecôte
or high rib)
This time, I cooked the vegetables in a skillet instead of roasting them in the oven as I usually do. I seared the meat briefly on each side in a very hot skillet, turning it every 30 seconds. It turned out melt-in-your-mouth tender! I served my herb butter with the meat!
Of course, you can also serve ribeye with other vegetables. I like the combination of potatoes and cauliflower—I think the two go together wonderfully. When cooked with herbs, they’re absolutely delicious!

Ingredients
2 Ribeye Steaks
2 Potatoes, diced
½ Cauliflower, roselets
1-2 red Onion, chopped
3 Garlic cloves, chopped
1 scallion, chopped
Olive Oil
Salt and Pepper
Chili
Paprika
Rosemary
Instructions

Step 1
Heat a little olive oil in a large skillet and sauté the onions and garlic.

Add the diced potatoes and cauliflower florets (they should all be about the same size) and season well. Cook until tender.

Meanwhile, season the steaks with salt, pepper, and chili powder.

Heat olive oil in another skillet until very hot. Add the steaks and cook for 30 seconds, then flip. Continue flipping every 30 seconds until they reach your desired level of doneness.
Notes
