These cauliflower fritters are incredibly easy and delicious, and you can make them with leftover cooked cauliflower.

Ingredients
200 g leftover mashed Potatoes
2 Eggs
1 small Cauliflower, cooked and chopped
Salt and Pepper
Paprika
Rosemary
1/2 Bunch Parsley, chopped
50 g Flour
20 g Breadcrumbs
Instructions

Step 1
Mix the cooked mashed potatoes well with the cooked and chopped cauliflower.

Add all the other ingredients, mix everything well, and beat until smooth.

Step 3
Fry tablespoon-sized pancakes in hot oil. Serve immediately.
