
Plum Cake with Almond Meringue Topping

Plum cake with almond meringue topping—a delicious cake! Plums aren’t ripe in Europe (yet), but we don’t live in Europe. Still, I was quite surprised when I found some at the supermarket. They’re not usually available here (even during the European season), and when they are, they cost a fortune. This time, they were so good and so cheap that I had to grab them right away!!!
Since I already have a few plum recipes here on the blog, I had to try something new, and the result is a wonderfully delicate cake.
To keep the plums really juicy, I marinated them in Amaretto—so yummy! This recipe is for a cake with a diameter of 32 cm.

Ingredients
For the Dough
300 g cold Butter, diced
2 Eggs
500 g Flour
1 tsp Salt
12 tbsp cold Water
1 kg Prunes or Plums, pitted and each cut into 6 pieces
1 tbsp Sugar
3 tbsp Amaretto
2 Eggs and 1 Egg yolk
20 g Sugar
200 g Creme Fraiche
50 g ground Almond
1 Egg white
1 Pinch of Salt
25 g Sugar
20 g ground Almond
Fruit Filling
Cream
Meringue
Instructions

Step 1
Knead the dough ingredients together in a food processor or kitchen machine and refrigerate for 1 hour.

Marinate the plums in the Amaretto marinade for 30 minutes.

Roll out the dough on baking paper to a size slightly larger than the baking tin and place it in the tin with the baking paper. Leave a rim standing up on all sides.

Mix the ingredients for the cream together and pour onto the cake base.

Spread the marinated plums evenly on top. Bake the cake in the oven at 180°C for 30-35 minutes.

For the meringue, beat the egg whites with a pinch of salt until stiff, add the sugar and continue beating, then mix in the almonds. Fill a piping bag with the mixture and pipe dots onto the baked cake. Bake the cake for another 10 minutes.
