Asian Glass Noodles with Spinach and Tahini

Glass noodles are very easy to cook, but they need a well-seasoned sauce to go with them, otherwise they are bland. These Asian glass noodles with spinach and tahini are really tasty because there are so many spicy ingredients, and you serve them with Chili Oel, for an intense kick!

I had invited friends to an Asian dinner, and they emphasized how good these glass noodles were, they had probably never had them served like this before.

Ingredients

  • 200 g Glass Noodles

  • 200 g fresh Spinach

  • 2 cloves of Garlic, grated

  • 1 tbsp Ginger, grated

  • 2 tbsp Sesame Oil

  • 200 g fresh Shiitake Mushrooms, sliced

  • 2 Spring Onions, chopped

  • 2 tbsp Soy Sauce

  • Pepper

  • Sesame Seeds

  • Sauce

  • 50 ml Soy Sauce

  • 2 tbsp Honey

  • 2 tbsp Balsamic Vinegar

  • 2 tbsp Rice Vinegar

  • 4 tbsp Tahini

  • 1 tbsp Ginger, grated

  • 1 clove Garlic, grated

  • 20 ml Water

Instructions

Step 1

Mix the ingredients for the sauce together.

Step 2

Place the glass noodles in boiling water and soak for 10 minutes. Once they are soft, cut them into shorter pieces.

Step 3

Heat the sesame oil in a wok and add the mushrooms. Cook for 3 minutes, add the garlic and ginger, mix well and fry for 2-3 more minutes.

Step 4

Add 2 tablespoons of soy sauce and some pepper. Add the spinach and fry briefly, then add the mixed sauce, then mix in the noodles. This is best done with large chopsticks. Place in a bowl and sprinkle with sesame seeds.
