Persian Kotlet
Pane-Bistecca
As I mentioned earlier, I had an Iranian brother-in-law. Persian cutlets are a dish he brought back from Persia and was the first to introduce to us. My sister cooks them often because they’re very popular! This is her recipe, which I recreated.
Kotlet-e Goosht is golden brown and crispy on the outside, tender on the inside, and is one of the dishes Iranians grew up with. Every family has its own recipe.
If you’ve always wanted to try classic Iranian home cooking, this is the perfect place to start. Forget dry or crumbly meatballs—here you’ll learn how to make them golden brown and perfect every time. This easy-to-follow recipe will quickly become your family’s favorite dish.

Ingredients
500 g waxy Potatoes
500 g ground Beef
3 Eggs
1 large Onion, finely chopped
4 tbsp Breadcrumbs, plus press more breadcrumbs onto both sides before searing
Salt and Pepper
some Turmeric
Estragon to taste optional
Instructions
1
Step 1
Boil the potatoes, peel them, and press them through a food mill, mash them — then let them cool.
2
Step 2
Chop the onion very finely!! Mix the ground meat, onion, and cooled mashed potatoes well.
3
Step 3
Add the eggs and breadcrumbs, then season. If desired, run the entire mixture through a meat grinder. Otherwise, make sure everything is very finely chopped and well mixed. Knead well by hand.
4
Step 4
Shape the cutlets so that they are roughly the shape of a hand or a large drop of water. Coat both sides in breadcrumbs.
5
Step 5
Fry in oil until crispy on both sides.
Notes
Marisa: In Iran, it’s usually served alongside several other dishes, or eaten cold with flatbread when traveling. My mother-in-law, Ashraf, always served peas with it in addition to rice.More Persian Dishes.
