
There will be a brief pause in my blog as I am traveling with friends in Switzerland for two weeks, hiking in Ticino. I’m sure I’ll have lots to report afterwards!
Sweet Potato Gratin with Chicken Fricassee
It doesn’t always have to be potato gratin, why not make one with sweet potato? I think it’s very good. But what doesn’t help with cooking is the starch, which thickens the milk in potato gratin. That’s why I put cheese in between. This makes the gratin very hearty and creamy!
I served it with chicken fricassee and vegetables, which can also be very spicy.
Ingredients
Gratin
500 g Sweet Potatoes
Salt and Pepper
Paprika
Chili
1 Mozzarella
200 g Taleggio Cheese
150 ml Milk
30 g Parmesan
600 g Chicken stripes
2 tbsp Oil
2 Garlic cloves, chopped
1 small Eggplant, diced
2 Tomatoes, chopped
3 small red Chilies, chopped
½ Bunch Parsley, chopped
100 ml White Wine
150 g Sour Cream
Salt and Pepper
Paprika
