
Lamb’s Lettuce Pesto

I have made another pesto, a lamb’s lettuce pesto! Yes, this lamb’s lettuce also works well to make a tasty pesto. Actually, the garlic cloves and the cheese add the perfect flavor.
I love fresh herbs and use them very often. In Europe, I simply planted herbs in the large plant beds, and they grow like crazy. I’m happy every time I can cut a handful of fresh thyme or something like that. Unfortunately, it’s too hot here in Asia for some types of herbs.
I really like pesto because this sauce is very versatile! It goes with a lot of things, as I have already mentioned. I use it as a dip, sauce and marinade, whether with fish, meat or vegetables and also in finger food, puff pastry and on salads.

Ingredients
100g Lambs Lettuce
30 g Basil
2 Garlic cloves
30 g Parmesan
20 g Pine Nuts
½ Lemon Zest
1 tsp Salt
some Pepper
approx. 100-120 ml Olive Oil
Instructions

Step 1
Place all the ingredients for the pesto in a blender and puree. Add as much olive oil as you like, thicker rather less, thinner rather more.

Fill into a clean jar and add a little olive oil on top to seal.
