Basically, this potato flatbread is a very simple kind of gratin. Spread flat and baked in a hot oven, it becomes crispy on the outside and remains soft on the inside. It goes wonderfully with grilled meat and fish, but also with saucy dishes such as goulash and roasts.

Ingredients
3-4 large Potatoes
1 Egg
100 g coarsely grated Cheese like Gruyère or Cheddar
3 tbsp Flour
3 tbsp Breadcrumbs
1 tsp Salt
1 tsp Paprika
Pepper
Rosemary
Nutmeg
Garlic Powder
50 g Parmesan, grated
4 Spring onion, chopped

Step 1
Scrub the potatoes well, then grate them directly into a bowl of cold water. Change the water several times until the starch has been washed out.

Then drain the potatoes well and dry them in a cloth.

Mix well in a large bowl with the Gruyère or Cheddar, spring onion, egg, both flours and the spices.

Grease a baking tray and sprinkle with the grated Parmesan. Then place the potatoes on top and spread. Bake in the oven at 180 C degrees for 40-50 minutes. Serve hot.
