Chicken Breast Pot with Gnocchi

Chicken breast pots are easy to make, and you can add whatever you like or have at home. I served this chicken breast pot with gnocchi as you should serve something to soak up the sauce.

I usually add Parmesan cheese, which thickens the sauce and gives it a great flavor. I also served it with sun-dried tomatoes, which go so well with the chicken. It was a very tasty dish!

Ingredients

  • 4 chicken breasts, halved

  • 4 garlic cloves, cut into pieces

  • 1 red onion, sliced

  • 1 red Capsicum, diced

  • 200 g mushrooms, cut into small pieces

  • ¼ bunch parsley, chopped

  • 6 dried tomatoes in oil, chopped

  • 2-3 tbsp Olive Oil

  • Fresh Thyme

  • Fresh Rosemary

  • (I still had cooked fennel, so I added that)

  • Salt and Pepper

  • Paprika

  • Chili

  • 100 ml White Wine

  • 1 Broth cube

  • some Water

  • 200 g Gorgonzola Cheese

  • 30 g grated Parmesan

  • Cream to taste

Instructions

Step 1

Season the chicken breasts and fry on both sides in hot olive oil. Add the onion, garlic cloves, peppers and herbs and fry.

Deglaze with the wine and season well, then add the tomatoes, mushrooms, stock cubes and fennel. Add a little water if necessary and simmer for 30 minutes.

Add the Gorgonzola in pieces and allow to melt, then sprinkle over the grated Parmesan. Add a little cream to taste.

Meanwhile, cook the gnocchi and serve both together.

Notes

It also goes well with mashed potatoes or pasta, polenta is also very good, but I would add a little more chili to the sauce. Here are many more Chicken recipes!
