Berry Slices

The berries are ripe! Why don’t we make berry slices?
I love raspberries and strawberries, blueberries and blackberries, “Trübli” (currants) and many more. I could eat them every day, preferably fresh. Here in Asia, all berries are imported, which means they arrive half-ripe or unripe so that they don’t go moldy when they are sold. But in Europe they come fresh from the field, really ripe. The taste experience surprises me every year!
For the party with the family, I decided to make berry slices because they are light and taste fantastic now that the berries are fresh and ripe! I made three different berry slices, one with strawberries, one with raspberries and one with blueberries. They tasted wonderful.
The slices can be made in several stages. The recipe is for a square baking tin measuring approx. 25 cm. I have made three times the amount so that there is enough for three different slices.

Ingredients
1. Part, Bottom:
250 g Flour
½ tsp Salt
110 g cold Butter, diced
70 g Sugar
100 g Flour
200 g Raspberries, Strawberries or Blueberries
100 g Sugar
1 tbsp Flour
2 Eggs
150 g Cream
1 tsp Vanilla Sugar

Step 1
Grate the ingredients for the base together until you have a crumbly mixture. Then add 2 tbsp of cream and press the crumbs into the baking tin.

Mix the ingredients for the sugar crust together and sprinkle over the base.

Sprinkle the berries on top. The strawberries can be cut or left whole.

Mix the ingredients for the pudding together and beat lightly with a whisk. Pour the pudding over the berries and bake in the oven at 180 C degrees for 50-60 minutes until golden brown.
