Garlic-Cheese Party Bread

I like to throw parties myself and always invite a mixed group of friends, acquaintances and newcomers. That’s why garlic and cheese party bread is a good idea. Once we were over 40 people and 25 of them were of different nationalities. That’s nothing special in Hong Kong, because it’s a place where all nationalities meet.

Each time I have to think about what I want to serve, because cooking for so many people is not easy. And I cook everything myself, I also make all the desserts myself, I really enjoy it and as I have a talent for organization, it’s not stressful for me.

We usually have a BBQ with sausages, various meats and fish, plus salads and other things. So this party bread counts as “other”! It is thickly filled and smeared with garlic cheese and then baked or grilled. It tastes wonderful; I can tell you that when I opened the foil, such a great smell came from the bread that I was suddenly surrounded by all my friends, and everyone wanted a piece! It’s also very easy and quick to make! Just right for a party!

Ingredients

  • A 500 g Bread I use whole-wheat (you could also use dark breads, like rye, but the bread will be too heavy and cannot be pulled apart as easily)

  • 500 g Boursin Cheese or other Garlic Cheese

  • Aluminium Foil

  • Chili to taste

  • Herbs to taste

Step 1

You can also add some seasoning to the cheese, like chili, or add some chopped herbs.

Make incisions with a sharp knife, approx. 2 cm apart, but not all through the bread. The bottom should hold it together. Turn the bread so you can make more incisions to get the top looking like a chess board.

Now this part must be done carefully, so not to pull the bread apart totally. Carefully widen the incisions lightly and fill them with the cheese. When all incisions are filled, brush the rest of the cheese on top of the bread.

Wrap the bread into a double layer of aluminium foil and put the bread onto the grill (or into the oven at 200 C for 30 minutes) not directly onto the hot part and the flames. After 15 minutes open it up and have a look if it is ready. Here you can add some grated cheese and put it back, in the open aluminium foil, and grill it for another few minutes.

Step 5

Serve the bread on a plate, everybody just pulls some of the squares off the bread and eats it!
