Delicious Asian Lemongrass Chicken

Lemongrass gives a wonderful lemony note to many Asian dishes, I like it a lot. Just like in this Delicious Asian Lemongrass Chicken! I added extra lots of it because it tastes better. You can deep fry the chicken if you want it crispy. I didn’t do that because it gets too heavy for me.

Ingredients
800g Chicken Breast, cut into cubes
4 stalks of Lemongrass
6 Garlic cloves
3 Coriander Roots
1 tsp black Peppercorns
1 Shallot
2 tbsp Oyster sauce (gluten free)
2 tbsp Fish Sauce
1 tsp Sugar
2 tbsp Cornstarch
Oil
1 Lime

Step 1
DCut the lemongrass into 4-5 cm long pieces and break them up with the rolling pin so that the fibers fall apart. Place the chicken cubes in a bowl with the lemongrass.

Puree the garlic, coriander roots, peppercorns, with the fish sauce, oyster Sauce sugar and cornstarch in a blender. Then pour over the chicken pieces. Mix well and let marinate for at least 1 hour.

Then heat the oil in a wok and fry the chicken pieces well in it together with the lemongrass. Transfer to a plate and drizzle with lime juice.
