Sweet Potato with Guacamole and smoked Salmon

Sweet potato is not really very sweet, just sweeter than regular potatoes. But many do not like them, including my hubby. That’s why I make such dishes as sweet potato with guacamole and smoked salmon only when he is not at home. This dish can be served as breakfast, lunch, or even a small dinner.
Similar to potatoes, the sweet potatoes are boiled, baked, deep-fried, au gratin or fried when washed and peeled. The unpeeled preparation in the oven also works. In Asian cuisine, especially Korean, sweet potatoes are widely used to make noodles, which are prepared there to make the popular japchae. In Japan, sweet potatoes are used for desserts such as the Yōkan or eaten as a roasted sweet potato snack. (from Wikipedia)

Ingredients
2 Sweet Potatoes or 1 large
Sour Cream
Paprika
Salt and Pepper
Chili
1 Egg
4 slices of smoked Salmon
some Oil
Instructions

Step 1
Peel the sweet potatoes and grate them coarsely. Season well and mix with the egg. Fry in a shallow pan Fry the sweet potatoes in portions in a flat pan.

Step 2
Place 2-3 patties on each plate, spread 1 tablespoon of guacamole and sour cream on each patty and top with a rolled up slice of smoked salmon. Serve immediately.
