Bricelets are fine thin cookies that can be made sweet or savory. Here is another recipe for spicy Bricelets/Bretzeli. You can already find the recipe for Spinat Bricelets. on my blog. The origin of this pastry is somewhere in Bern, Fribourg, and was already mentioned in 1373 in a writing in Burgdorf. For the traditional Bretzeli you need the right waffle iron, the Swiss one is quite patriotic, with Swiss cross design and more!

In the past you had to lift the heavy iron thing, by its long arms, on the fire, hard work! Today it’s electric, the modern waffle irons are foldable like a book.

Ingredients

  • 200 g soft Butter

  • 100 ml Water

  • 2 ½ tsp Spice Mixture of Paprika, Pepper, dried Italian Herbs, Chili flakes and Cinnamon

  • 300 g Flour

  • 1 Egg

  • ¼ tsp Salt

  • 20 g grated Cheese

Instructions

Step 1

Mix the spices into the water. Put the flour, salt, grated cheese, egg and butter in the bowl of the food processor and mix. Now while mixing, pour in the spice water. Mix well until a sticky dough is formed. Let rest for 1 ½ hours.

Step 2

Heat the waffle iron and grease it with butter. Place a heaping teaspoon of the mixture on each of the 4 pretzel squares and close the iron. When the steam stops coming out, open the iron. You can, however, peek in beforehand to make sure nothing burns.

Step 3

Grease the iron again and repeat. Let the waffles cool and cut them from each other.

Notes

The Bricelets are beautifully thin and crisp.
