Japanese Miso Cod on Vegetables

Japanese Miso Cod is quite a great meal, the fish becomes incredibly buttery soft and super flavored by the miso. You can read about miso here. I served the fish on vegetables. This dish is cooked quite quickly and doesn’t need much work, but you should marinate the fish the night before to make it so buttery soft.

Ingredients
600-800 g Cod fillets or pieces or Salmon.
75 ml white Miso
75 ml Sake
75 ml Mirin
4 tbsp Sugar
1 tbsp Oil
2-3 Pack Choi, Leaves taken apart
150 g Shiitake Mushrooms, sliced
3 Garlic cloves, sliced
2 tbsp Soy Sauce

Step 1
Boil the marinade briefly until everything has melted, then let cool. Then add the fish to the marinade and let it marinate overnight (or 2-3 days).

Place the fish on a greased baking sheet and bake in the oven at 200 C degrees for 20-25 minutes.

Heat the oil in a wok and fry the garlic briefly. Then add the pack choi and fry briefly on all sides until it collapses. Add the mushrooms and pour in the soy sauce. Continue frying for 2-3 minutes, then transfer from the wok to a wide bowl.

Place the fish on top of the vegetables, being careful not to let it fall apart. Sprinkle with black sesame seeds and serve.
