Chinese Fried Rice #CucinaPovera Blogevent
Rice is served with all meals, even for breakfast. At the end of the week, you have a real mess of leftovers, and you just mix them into the rice and fry it up! Very simple and the best way to use leftovers. By the way, in China, fried rice is traditionally served as the 2nd last course, before dessert, not like in Europe where it is dished up right at the beginning of the meal. If you want rice with meat or vegetables, you get steamed rice.
Ingredients
My fried rice goes like this:
2 cups of Chinese Rice cooked the day before and well dried out.

2 Spring Onions, chopped
1 cup Shrimp, peeled

Notes
– NEVER use freshly cooked rice!– Use a large wok so that you can mix well!
– Heat the oil well in the wok, then add the ingredients!
– Keep mixing and turning the rice while frying.
– Do not mix too much soy sauce or oyster sauce into the rice when cooking, everyone can decide for themselves if they want to add more when eating!
