Adobong Talong – Aubergine Adobo

There are many adobo recipes in the Philippines, and I also have some on my blog, especially with meat. This adobong talong – aubergine adobo is vegetarian!

On my blog there are some. So, there is already the Chicken Adobo, the Adobo with Coconut and the Adobo inspired Chicken. But you can also make an adobo with vegetables, and I chose eggplant. Well, those who know me already know I am an eggplantinoholic!

Ingredients

  • 6 thin, Asian Eggplants cut into pieces 3-4 cm long. (you can also use normal Eggplants, just cut them into sticks)

  • 1 whole Garlic, chopped

  • 1 tsp whole Peppercorns

  • 3 Bay Leaves

  • 50 ml Soy Sauce

  • 20 ml white Vinegar

  • Oil for frying

Step 1

In a wok or heavy pot, sauté the garlic, peppercorns, and bay leaves.

Add the eggplants and fry for about 5 minutes. You may have to do this in 2-3 batches for this quantity.

Then put everything back into the wok. Mix the soy sauce, vinegar and about 100 ml water together and add. Turn the heat to medium and cover the pot or wok. Simmer for 8-10 minutes, occasionally turning the eggplant until the sauce becomes slightly oily.

Serve with rice!
