Ich habe die klassische Tortang Talong bereits bei einer Kulinarischen Weltreise eingestellt und habe dort schon geschrieben, dass ich die jeden Tag essen könnte. Dieses Mal bringe ich Euch eine Variation, die hier sehr oft als Frühstück aufgetischt wird. Man isst hier kein Brot, sondern Reis mit Corned Beef und Spiegelei, oder eben die Auberginen mit Corned Beef und Reis. (der gehört zu jedem Mahl!)

Ich bin sonst kein Fan von Corned Beef, aber hier habe ich ihn lieben gelernt, als Topping der Tortang Talong! Natürlich gehört dieses Rezept auch zur Kulinarischen Weltreise von Volkermampft, die diesen Monat nochmals in die Philippinen reist.

I already showed you the classic Tortang Talong in a Culinary World Tour and have already written that I could eat them every day. This time I bring you a variation that is served here very often as breakfast. You don’t eat bread, but rice with corned beef and fried egg, or eggplant with corned beef and rice. (which is part of every meal!)

I’m not usually a fan of corned beef, but here I learned to love it, as a topping of tortang talong! Of course, this recipe is also part of Volkermampft’s Culinary World Tour, which travels to the Philippines again this month.

Corned Beef Tortang Talong

Für 4 Personen:
4 mittelgrosse Auberginen
3 Eier
4 EL Mehl (Reismehl für glutenfrei!)
Etwas Salz
Oel zum Braten

Corned Beef Topping:
1 Büchse Corned Beef
4 Knoblauchzehen, gehackt
1 rote Zwiebel, gehackt
Frühlingszwiebeln

Den Stiel bitte an den Auberginen dran lassen! Dann rundherum mit der Gabel einstechen und so lange im Ofen garen, bis sie weich sind. Leicht abkühlen lassen und die Haut sorgfältig ablösen. Die Auberginen leicht mit der Gabel flachdrücken, dabei kann man sie oben am Stiel gut festhalten.
Aus Eier, Mehl und Salz einen Teig machen. Die flachgedrückten Auberginen am Stiel festhalten und im Ei wenden. Im Öl braunbraten.
In einer separaten Pfanne den Knoblauch und die Zwiebel in Oel gut durchbraten. Das Corned Beef zerhacken und dazu geben. Alles gut durchbraten. Die Auberginen mit dem Corned Beef bestreichen, etwas gehackte Frühlingszwiebeln darüber geben und servieren.

Serves 4:
4 medium Eggplants
3 Eggs
4 tbsp Flour (Rice flour for gluten-free!)
A little salt
Oil for frying

Corned Beef Topping:
1 can of Corned Beef
4 Garlic cloves, chopped
1 red Onion, chopped
Spring onions

Please leave the stem on the eggplants! Then prick all around with a fork and roast in the oven until tender. Let cool slightly and carefully peel off the skin. Flatten the eggplants slightly with a fork, holding them firmly at the top of the stem.
Make a batter with eggs, flour, and salt. Hold the flattened eggplants by the stem and turn them in the egg. Fry in the oil until brown.

In a separate pan, sauté the garlic and onion in oil until well done. Chop the corned beef and add it. Fry everything well. Coat the eggplants with the corned beef, add some chopped spring onions and serve.
