Simple filled Pasta Rolls

If you buy fresh pasta sheets you are not being forced to make Lasagna with them. I made a meat filling and just rolled them up easily. Baked in the oven, they have a resemblance to Cannelloni, but the taste is different. That’s why I am not calling them Cannelloni, but just simple pasta rolls.

Ingredients
500 g fresh Pasta Sheets of approx. 10/20 cm
3 raw Pork Sausages, the meat pushed out of the skin
100 g Bacon bits
1 Onion, chopped
3 Garlic cloves, chopped
2 Carrots, diced
1 Eggplant, diced
2 tbsp Olive Oil
50 ml Red Wine
1 Jar Tomato Pesto
Salt and Pepper
Paprika
Rosemary
1 jar Tomato sauce (400 ml)
1 Mozzarella
grated Parmesan

Step 1
Fry the garlic and onion in the olive oil until translucent. Then add the meat of the sausages and chop with the wooden ladle. Season well and fry well, then add the bacon cubes. Add the vegetables and the red wine. Mix briefly and then add the pesto. Let it boil down for about 30 minutes, or until the liquid is reduced. Then let cool slightly.

Step 2
Spread out the pastry sheets on a work surface and put 2-3 tablespoons of the filling on the end of the shorter side. Now roll up loosely from the filled end and place in a greased gratin dish.

Pour the tomato sauce over the top and cut the mozzarella into small pieces and place over the top. Sprinkle with grated parmesan and bake in the oven at 200 C degrees for about 40 minutes. Serve hot.
