Brazilian Chicken Curry

In Brazil they cook curries too! This curry here is very good because the meat is marinated beforehand with a dry rub. This makes the meat tender. The addition of lemons makes the curry very good and really tasty.

Ingredients

Dry Rub

  • 1 tsp Cumin Powder

  • 1 tsp Cayenne Pepper

  • 1 tsp Turmeric

  • 1 tsp Coriander Powder

  • 1 tsp Salt

  • 1/2 tsp Pepper

  • And

  • 4 Chicken Breasts

  • 1 Onion chopped

  • 3 Garlic cloves chopped

  • 1 Jalapeño Pepper, seeds removed and chopped

  • 1 tablespoon Ginger, chopped

  • 3 Tomatoes, chopped

  • 2 Lemons, the juice and the squeezed peels

  • 400 ml Coconut Milk

  • Fresh Parsley chopped

  • some Oil

Instructions

Step 1

Mix the dry rub ingredients together and rub it on the chicken breasts. Leave to marinate overnight.

Heat some oil in a shallow pan and fry the breasts in it until brown all over. Set aside.

In the same pan, heat some more oil and fry the chopped onion, jalapeño, ginger, and garlic. Add the chopped tomatoes, lemon juice and squeezed lemons and season with salt and pepper. Simmer for about 5-8 minutes, then pour in the coconut milk. Simmer again a bit, the sauce will thicken a bit.

Step 4

Then add the chicken breasts. Simmer on low heat for 10 minutes. Garnish with parsley and serve with white rice.
