Lachs ist ein Allerwelts Fisch, er lässt sich auf so viele Arten zubereiten. Ich koche ihn sehr gerne, wenn ich Besucher habe, denn man kann ihn vorbereiten und muss so nicht in der Küche stehen, wenn die Gäste kommen. Diesmal habe ich den Lachs mit Petersilien-Limetten Pesto mariniert und dann einfach im Ofen gebacken. Petersilie und Limetten gehen super zusammen und passen unglaublich gut zu Fisch! Dieses Rezept ist so einfach und so gut!

Salmon can be prepared in so many ways. I like to cook it when I have visitors, because it can be prepared in advance and then cooked in the oven. So you can chat with your visitors instead of working in the kitchen. This time I made a parsley-lime pesto and marinated the salmon in it. Parsley and Lime go very well together and fit perfect to fish! This recipe is so simple and so good!

Lachs mit Petersilien-Limetten Pesto

Fuer 4 Personen:
1 Stück Lachs von ca 800 g
2 Limetten
3 Knoblauchzehen
1 Bund Petersilie
3 EL Olivenöl
Salz und Pfeffer

Das Olivenöl, den Knoblauch, die Petersilie, etwas Salz und Pfeffer in den Blender geben. Eine Limette abreiben, dann den Saft davon ausdrücken und diese Zutaten in den Blender geben. Alles kurz pürieren. Es muss nicht zum Brei werden, es darf ruhig noch Stücke drin haben. Den Lachs in eine eingefettete Gratinform geben und das Pesto darüber giessen. 30 Minuten ziehen lassen, oder bis zur Weiterverarbeitung im Kühlschrank lagern. Die zweite Limette in schmale Scheiben schneiden und auf dem Fisch verteilen. Den Fisch im Ofen bei 200 C Grad ca 20-30 Minuten backen.

For 4 Persons:
1 piece of Salmon of approx. 800 g
2 Lime
3 cloves of Garlic
1 Bunch Parsley
3 tbsp Olive Oil
Salt and Pepper

Put the olive oil, parsley, garlic, salt and pepper into the blender. Grate the skin of one lime into the blender and press the juice of that lime out, add it to the blender. Blend for a short while, the pesto doesn’t have to be all smooth. Put the salmon in to a greased gratin dish and pour the pesto over it. Let it marinate for 30 minutes. Or if you like to prepare this dish in advance, put the salmon with the marinade into the fridge until further use. Cut the second lime into small slices and decorate them onto the salmon. Bake the fish in the oven at 200 C for approx. 20-30 minutes.
