Broccoli Soup

It is getting towards Winter and it gets colder, at least that’s how it is in Europe. Here in Asia we have the best time of year, it is like a summer in Europe. But even if it is hot we like to eat a soup from time to time. In Switzerland you will be happy to get a warming soup, as the weather is cold and gray. Such a homemade soup will not just warm your tummy but also your heart!

This broccoli soup takes part in the Foodblogsschweiz Challenge in November.

Ingredients

  • 1 Broccoli

  • 1 yellow Capsicum (I still had it in my fridge, you can omit it)

  • 2 Potatoes

  • 2 Garlic cloves

  • 1 L Broth

  • Salt and Pepper

  • Paprika

  • Rosemary

  • some Cream or Sour Cream to taste

  • 2 tbsp Sunflower Oil

Instructions

Step 1

Peel the garlic and press it, peel and dice the potatoes, cut the broccoli and capsicum into small pieces.

Step 2

Heat the oil in a deep pot and add all the vegetables and the garlic. Fry for a while, then add the water and broth cube and season everything well.

Let cook for 20 minutes.

Step 4

Pour the soup into a blender and puree. Pour back into the pot and add some cream to taste. Serve hot!
