Oft hat man Reste von Speisen, will die aber nicht einfach nur aufwaermen, so ist es auch mit dem weissen Reis.
Die Chinesen sind da sehr raffiniert, sie braten ihn auf, geben ihm irgendwelche Zutaten zu und schon haben sie ein neues Gericht.
Das habe ich auch gemacht, aber ich habe ihn  mit italienischen Zutaten angereichert. Ein paar Zucchini und italienische Kraeuter machten ihn zu einer feinen Zutat zu unserem Fisch.

Sometimes I have leftovers from various dishes, but I don’t like to just heat them up and serve them the same way again. That’s especially so with white rice. 
The Chinese are ingenious with this rice, they give it a few new ingredients and fry them up, and so create a new dish. 
I did the same, but I did it the Italian way! I added some zucchini and Italian herbs and so it was the perfect side dish to our fish! 

Fuer 4 Personen:
300 g gekochter weisser Reis
2 Zucchini
1 rote Zwiebel, gehackt
3 Knoblauchzehen, gehackt
2 Eier
Salz und Pfeffer
Paprika
Oregano
Rosmarin
Basilikum
2 EL Olivenoel

Der Reis sollte am Vortag schon gekocht werden, damit er etwas austrocknet!
In einem Wok oder einer weiten Pfanne das Olivenoel erhitzen und darin die Zwiebel und Knoblauchzehen anbraten. Die in kleine Wuerfel geschnittene Zucchini zugeben, gut wuerzen und durchbraten.
Die Eier in einer kleinen Schuessel aufschlagen und mit einer Gabel verschlagen. Zum Gemuese geben und mit einer Holzkelle gut vermischen und dauernd aufkratzen, so dass die Eier flockig gekocht sind. Den Reis zugeben und alles gut durchbraten. Heiss servieren!

For 4 Persons:
300 g cooked white Rice
2 Zucchini
1 red Onion, chopped
3 cloves of Garlic, chopped
2 Eggs
Salt and Pepper
Paprika
Oregano
Rosemary
Basil
2 tbsp Olive Oil

Best cook the rice the day before, it should be dried out slightly! Heat the oil in a wok or wide frying pan, add the onion and garlic and fry them. Add the diced zucchini and season them well. Let fry for a while. 
Beat the eggs in a small bowl, then add them to the vegetable. Mix immediately and very well, so the eggs will fry and fall apart. Add the rice and fry all well. Serve hot!
