This is a recipe made from left-overs of mashed potatoes. I like to cook a little too much mashed potatoes so I can make a meal with the leftovers.
This is just a suggestion of what to add and how to do them. I will not include exact measurements as that depends on the amount of left-over mashed potatoes. It is easy as you don’t need to boil potatoes anymore, just use whatever you have left. Of course, if you don’t have any leftovers, make your favorite mashed potatoes first.

Ingredients
Left-over mashed Potatoes
1-2 Egg-yolks, depending on the amount of left-overs
chopped Chorizo, Ham, Sausages or meat left-overs
Spring-onion, chopped
Salt and Pepper
Nutmeg
Paprika
Chili Flakes
mixed Italian Herbs
as much Flour as to make the mass thick
Breadcrumbs
2 Egg whites

Step 1
Prepare 3 plates with the following:
1 plate filled with breadcrumbs, 1 plate filled with 2 beaten egg-white, 1 plate filled with flour.

Step 2
Wear one-way gloves! Make little balls with the potato dough and turn them over, first in flour, then egg-white and last in the breadcrumbs.
