
Tomato-Pomelo Salad

I love this tomato-pomelo salad! It’s very refreshing and fruity.
We were invited to dinner at a new restaurant where the young chef serves some really great fusion dishes. One of them was a tomato-pomelo salad, but it was served with just herbs. I liked it because tomatoes and pomelo go really well together, but I would have made a vinaigrette to go with it.
So, I tried it at home and mixed in some cheese to round out the flavors. I have to say, it goes together wonderfully!

Ingredients
2 Salad Tomatoes
¼ Pomelo, peeled and skinned (you can also use Grapefruit)
3 strips Parmesan or Pecorino Cheese, diced
½ Bunch Chives
Juice of ½ Lemon
2-3 tbsp Olive Oil
2 tbsp Mustard
Salt and Pepper
Chili
Paprika
Herbs to taste
Dressing

Step 1
Quarter the tomatoes and cut them into thin slices. Arrange them on a plate.

Step 2
Break the pomelo slices into small pieces and add them to the plate. Cut the cheese into small pieces and add it to the mixture. Chop the chives and sprinkle them over the salad.

Step 3
Mix the dressing ingredients together and pour over the salad.

Let it sit in the refrigerator for 30 minutes to let the flavors meld.
