
Slow-cooked Pork Shanks with Gnocchi

Slow-cooked pork knuckles with gnocchi—easy to make, but a Sunday dinner for many; we love it.
There are certain dishes that I cook especially for my family. These include osso buco and these pork shanks. They aren’t difficult to make, since they spend most of the time just simmering away. That’s why these shanks are so convenient when you’re finally back with your family and don’t really want to spend too much time in the kitchen. So this dish is really convenient—and incredibly delicious, too!

Ingredients
6 Pork Shanks
Salt and Pepper
Paprika
Chili
Rosemary
some Flour
a few Potatoes
2-3 Carrots
1 Bunch Parsley, chopped
4 Garlic cloves, chopped
3 Onions sliced
200 ml Red Wine
150 ml Cream
Olive Oil
Instructions

Step 1
Season the pork knuckles very well and sprinkle them with some flour. Heat some olive oil in a flat pan and fry the meat on all sides in good heat. Put aside.

Dice all the vegetable, chop the garlic, and slice the onion. Fry the vegetables in the same pan as the meat, you might have to add some oil. Put the vegetable into a roasting pan.

Add the pork knuckles and push them into the vegetables. Add the red wine and some water, so the meat will stand at least half in the liquid.

Cover with a lid and roast in the oven for at least 3 hours at 160 C. In between check if there is still enough liquid and turn the meat over from time to time.

Check the meat with a pointy knife to see if the meat is soft. When the meat is soft, take them from the pan and keep them warm.

Pour the liquid with the vegetable into a small pot and add the whipping cream, season to taste and maybe you need to thicken it with cornstarch.

Meanwhile cook the gnocchi in salted water until they float, then take them out and shortly fry in some butter.

Chop the parsley. Plate the meat with the gnocchi and the vegetables and sauce and sprinkle with the parsley. Serve immediately!
