
Green Asparagus Salad with Feta Cream

A green asparagus salad with feta cream is something different! I cooked it from the Betty Bossi booklet, slightly modified.
The feta cream goes wonderfully with green asparagus, but I can also imagine other vegetables with it. I served everything cold, and it makes a very good starter!

Ingredients
Feta Cream
200 g Feta
100 g Greek Yoghurt
2 tbsp Milk
Pepper
Paprika
500 g thin green asparagus, approx. 3-5 cm of the ends cut off
2 tbsp Olive Oil
50 ml White Wine
6 cloves of garlic, halved
Salt and Pepper
Chili Powder
1 tsp coriander leaves, chopped
Sprouts and flowers for decoration
For the Asparagus
Instructions

Step 1
Puree the feta with the yogurt and spices. Spread this mixture on a plate.

Step 2
Heat the oil in a wide pan and fry the garlic cloves in it. Add the asparagus and fry for approx. 3 minutes.

Step 3
Deglaze with white wine, season and reduce briefly. Leave to cool.

Step 4
Once cold, place on top of the feta mixture, garnish with chopped coriander and the sprouts and fried garlic.
