Simon’s Basler Määlsuppe – Carneval Soup

Simon’s Basler Määlsuppe – Fasnachtssuppe (Flour Soup) is a very traditional soup in Switzerland! But there is no “original” because every housewife has her own recipe.

It is impossible to imagine the carnival season and especially the Basel carnival without this soup. Alongside Zibelewähie (Onion Tart) and Chäsewähie, (Cheese Tart) this soup simply belongs on the table! “There is no Basel carnival without Määlsuppe!” In Basel, flour soup has been eaten on the early morning of the carnival since the 19th century. Here in Zurich, this soup was mainly eaten on New Year’s Eve and was cooked at midnight!

Rumor has it that a gossipy maid forgot the flour in the pan and it turned brown, which gave the soup its color. But as the maid didn’t want to throw anything away, this is how Basler Määlsuppe was created!

Simon is my daughter’s fiancé and he cooked this soup for us at midnight on New Year’s Eve! The soup is taking part in the Culinary World Tour from Volkermampft which is collecting soups from all over the world this month.

Ingredients

  • 50 g Flour

  • 50 g Gruyère Cheese, grated

  • 45 g Butter, diced

  • 1 L Water

  • 2 Beef Stock Cubes

  • 1 Pinch of Salt

  • some Pepper

Instructions

Step 1

Place the flour in a shallow pan and toast over a medium heat without fat, stirring until light brown. Set aside.

Step 2

Reduce the heat, place the butter in a pan and melt slowly. Add the flour again. Pour in the stock and bring to the boil, stirring vigorously with a whisk so that no lumps form. Reduce the heat and simmer for approx. 1 hour, stirring occasionally. Season to taste with pepper.

Step 3

Pour into cups or plates and serve with the grated cheese.

Notes

I always use beef stock for such soups, as it can be very hearty, but if you are vegetarian, you can use vegetable stock.
