Homemade Rainbow Pasta

Now that I’ve shown you Farben für Pasta macht, today we’re going to make homemade rainbow pasta. It’s not that hard to make striped pasta, but you must have a little practice with the dough. That is, if you want to make rainbow pasta right at the beginning, you will have problems. You must know if the dough is too wet or too dry.

Instructions

Step 1

You need 5-6 colors, here they are. I would make 100 g of pasta dough per color, this will make about 800 g of pasta, but you must be very careful to add flour if the color is too wet, otherwise the dough is hard to roll out.

Step 2

Each color is turned individually through the pasta machine in size 0 and the dough sheets are stacked on top of each other. Please do not sprinkle flour in between!!! The dough sheets should stick together. Then cut this dough stack in to halves and wipe off the flour of the lowest plate and stack the two halves on top of each other. Now you have 10-12 colors on top of each other.

Step 3

This stack is now cut into slices about 4-5 mm thick and these slices can now be rolled out with the pasta machine so the stripes are lengthwise as thin as you want. This way is suitable for very simple pasta patches, or penne, rigatoni, pappardelle, orecchiette and farfalle, and of course ravioli.

Step 4

Now you can cut this stack in half again and put them on top of each other, so you have 20-24 colors. This stack is also cut into 4-5 mm thick slices and these slices can now be rolled out with stripes across with the pasta machine as thin as you like.
