
Gluten-free Caramel Sticks

Gluten-free caramel sticks are so easy to make and have a wonderful caramel flavor! Here are two simple variations.
You can get the caramel flavor by caramelizing nuts or by adding chopped caramel candies. I’ve tried both and they both taste great. The ones with caramelized nuts have a stronger flavor than the ones with added caramel candies. So, it’s up to you which type you choose!

Ingredients
1 Tray, Caramelized
100 g Sugar
100 g chopped Hazelnuts
2 Egg white
1 Pinch of Salt
50 g Sugar
100 g ground Hazelnuts
1 Egg white
1 Pinch of Salt

200 g ground Hazelnuts
50 g chopped Caramel Candies (the soft ones!)

Instructions

Step 1
Melt the sugar in a saucepan, then add the chopped hazelnuts and mix well. Roast briefly, then spread out on a baking sheet and leave to cool.

Finely grind the caramel in a blender.

Beat the egg whites with a pinch of salt until stiff, then gradually add the sugar while continuing to beat.

Now fold the ground caramel and the remaining hazelnuts into the egg whites. Line a baking sheet with parchment paper, sprinkle lightly with sugar, and spread the mixture on top.

Cut into strips using a pizza cutter or sharp knife. Bake in the oven at 220°C for 8-10 minutes.

Fold in the remaining ingredients.

Line a baking sheet with parchment paper and spread the mixture on top.
