Rum Guetsli

Rum Cookies

Pane-Bistecca
Rum Guetsli is a cookie for adults only! You can taste the rum, so I can imagine that children won’t like it. However, you can replace the rum with lemon or orange juice.

They are very easy and quick to make! I specifically used small cookie cutters because the cookies are easier to eat and look really “cute”.

Ingredients

Dough:

  • 150 g Flour

  • 1 Egg yolk

  • 120 g Butter

  • 90 g Sugar

  • 1 tbsp Vanilla Sugar

  • Filling:

  • 150 g raw Marzipan

  • 160 g Icing Sugar

  • 2 tbsp Rum

  • Decoration:

  • 60 g white Chocolate

Instructions

Step 1

Knead the ingredients for the dough together quickly and leave to rest in the fridge for at least 1 hour.

Roll out the dough to a thickness of approx. 4 mm. Then cut out as many cookies as possible using a small cutter about 2 cm in diameter. I use a small but tall cutter for this, so I can cut out 5-6 cookies at a time and then simply shake them out of the cutter.

Bake in the oven at 180 C degrees for 10-12 minutes. Leave to cool well.

Knead the filling ingredients well together.

Fill two cookies with a small ball of this filling and press well together.

To decorate, melt the white chocolate, leave to cool slightly in a piping bag and then decorate the cookies with it.
