Lemon Posset – Vitamin C meets health drink!

Lemon Posset – vitamin C meets health drink; can you believe it? You’re probably wondering what a posset is… I didn’t know that either, so I did some research. A posset was originally a hot, spiced milk drink that was drunk in Great Britain in the Middle Ages. It was a health drink that was taken for colds and flu.

Lady Macbeth used a posset to put the guards outside Duncan’s rooms to sleep, so it was also in Shakespeare.

What does this have to do with dessert? Over the course of time, it has become a dessert made from cooked cream, honey or sugar and lemon. It only needs 3 ingredients and is incredibly quick. I have recreated my posset from the book “Desserts” by Michel Roux.

Ingredients

  • 6 Lemon

  • 375 g Sugar

  • 700 ml Heavy Cream

  • Decoration:

  • Strawberries

  • chopped Pistachios

  • Icing Sugar

Instructions

Step 1

Wash two lemons and dry well, then rub off the skin and dry in a microwave oven for 10 seconds, or in the oven for 5 minutes at 80 degrees. Then leave to stand to finish drying.

Step 2

Pass the juice of the 6 lemons through a sieve and bring to the boil with the sugar in a pan. Simmer until the sugar has completely melted, stirring constantly with a wooden ladle.

Step 3

Bring the heavy cream to the boil in a second pan until it boils. Remove from the heat and immediately add the lemon syrup and stir in well.

Step 4

Pass this mixture through a sieve again and pour into glasses. Chill for 4 hours.

Notes

Decorate as desired with strawberries, chopped pistachios and powdered sugar and sprinkle with dried lemon zest. Here you can find the Lemon Mousse, and the Coppa di Limone verde.
