Homemade Linguine with Pork Sausage Sauce and Cherry Tomatoes

Homemade linguine with pork sausage sauce and cherry tomatoes is a very spicy and colorful pasta dish. As I usually make my own pasta (it really isn’t that much work!), this time I made linguine that was cut using a ravioli wheel.

It was served with a sauce of pork sausage and cherry tomatoes, deglazed with white wine! I always make too much sauce, so I can freeze some of it.

Ingredients

Sauce

  • 3 Italian Pork Sausages, raw

  • 150 g Cherry Tomatoes

  • 3 Garlic cloves

  • Salt and Pepper

  • Paprika

  • Rosemary

  • Oregano

  • 1 Chili, chopped

  • 100 ml White Wine

  • 1 tbsp Olive Oil

Step 1

Make Pasta dough from this recipe.

Roll out the dough thinly and cut into evenly narrow strips using the ravioli wheel. Hang the linguine on coat hangers to dry without taking up too much space.

For the sauce, chop the garlic cloves and fry in olive oil, add the chili.

Press the meat from the sausages out of the skin and chop, then add to the garlic. Fry the meat very well, chopping occasionally with a wooden shovel. Add the halved cherry tomatoes and season everything well. (Watch out! If you have bought the spicy Italian sausages, you won’t need much seasoning).

Add the white wine and simmer for about 15 minutes.

Meanwhile, cook the linguine in salted water for approx. 10-13 minutes, drain and serve mixed with the sauce and grated Parmesan cheese.
