Carrot Orange Soup

I’m still in Europe and the weather is doing jumps. Well, you know that April does what it wants. One day it’s 28 degrees, then the next day it’s 8 degrees….

That’s why you can also enjoy a soup, such as this delicious and creamy carrot-orange soup. It is very easy to make and tastes very special thanks to the addition of orange juice.

Ingredients

  • 1 medium size Onion, chopped

  • 3 Carrots, sliced

  • 1 large Potato, diced

  • 2 tbsp Butter

  • 1 tsp Sugar

  • Salt and Pepper

  • Chili

  • 600 ml Broth

  • 120 ml Orange Juice (Juice of 3 Oranges)

  • Chieves and Crème fraîche for Decoration

Instructions

Step 1

Melt the butter in a pan and fry the onion until translucent. Add the sugar and add the carrots and potato. Fry everything for 5 minutes, season well.

Step 2

Pour in the stock and orange juice and simmer the soup for 20 minutes. Then puree.

Step 3

Pour the soup into plates and garnish with a dollop of crème fraîche. Sprinkle with chopped chives and serve.
