Ingredients
1 medium size Onion, chopped
3 Carrots, sliced
1 large Potato, diced
2 tbsp Butter
1 tsp Sugar
Salt and Pepper
Chili
600 ml Broth
120 ml Orange Juice (Juice of 3 Oranges)
Chieves and Crème fraîche for Decoration

Step 1
Melt the butter in a pan and fry the onion until translucent. Add the sugar and add the carrots and potato. Fry everything for 5 minutes, season well.

Step 2
Pour in the stock and orange juice and simmer the soup for 20 minutes. Then puree.

Pour the soup into plates and garnish with a dollop of crème fraîche. Sprinkle with chopped chives and serve.
