Chinese Barbecue Pork – Char Siu

As with many recipes, this Chinese Barbecue Pork – Char Siu in Chinese, is a recipe that every household makes “better”. There are many ways to make it, but every time it is very good! Therefore, there are many ways to cook it.

You can see this in my various recipes for the Sticky Char Siu and the Char Siu with pork belly. No matter how you cook it, it’s eaten away in no time!

Ingredients

  • approx. 400 g Pork Shoulder or Neck in one piece

  • Marinade

  • 4 tbsp brown Sugar

  • 1 1/2 tbsp Honey

  • 2 tbsp Hoisin Sauce

  • 1 tbsp Soy Sauce

  • 1 tsp Sesame Oil

  • 1 tbsp Oil

Instructions

Step 1

Pour all ingredients for the marinade into a small saucepan and bring it to a boil. Turn off the heat and mix well. Let it cool down.

Step 2

Put the meat into a freezer bag and pour the marinade over it. Push the air out of the bag and close it tightly. Knead the meat in the bag until it is well covered with the marinade. Let marinade for 3-6 hours.

If you have a roasting pan with rack use it, if you don ‘t have one just use the rack from the oven and put a baking tray under it.

Mix the rest of the marinade with another tbsp of honey. Pour it into a small bowl.

Put the meat onto the rack of the roaster (or the rack in the oven) and baste the meat well with the marinade. Bake in the oven at 180 C for 10 minutes, then baste again with the marinade.

Bake for another 15 minutes, the inside temperature should be between 65 and 70 C. Turn on the grill of the oven, baste the meat well again and grill for 3-5 minutes, until the sides are charred.

Cover the meat with some aluminium foil and let rest for approx. 8 minutes, then slice and serve it!
