Pork Roast with Red Wine Eggplants

Such a Pork Roast with Red Wine Eggplants… that’s a great Sunday meal! And the good thing about it, it takes so little work! It’s perfect because you also want to enjoy Sunday. I like to make dishes like this when my whole family is at the table, little work for many hungry mouths. This way one even has time for a cocktail!

Ingredients

  • 1 Roast Pork of about 1 kg

  • Marinade:

  • 4 tbsp Mustard

  • 2 tbsp Ketchup

  • 6 Garlic cloves, chopped

  • 1 tsp Chili

  • Salt and Pepper

  • 1 twig Rosemary

  • 1 twig Thyme

  • 6 tbsp Olive Oil

  • For the Eggplants:

  • 2 Eggplants, diced

  • 3 cloves of Garlic, chopped

  • Rosemary

  • Oregano

  • Salt and Pepper

  • 2 tbsp Olive Oil

  • some Chili

  • 100 ml Red Wine

Instructions

Step 1

Mix all ingredients together and coat the meat with it. Leave to marinate for at least 2 hours or overnight.

Then place the roast in an oven proof dish and let it roast in the oven at 180 C degrees for 90-100 minutes. I turned the roast once.

Heat the olive oil in a pot and sauté the garlic and eggplants in it. Season everything well. When the eggplants are browned, add the red wine. Let it simmer for about 20 minutes.

Step 4

Serve with gnocchetti. I served herb butter with the meat.
